Who doesn’t love good pancakes? I certainly do! Especially if they are vegan and high in fiber & as well as protein! Which makes them the perfect brunch option for a Sunday post workout. And they are super quick and easy to make! And because I hate when people tell their life story before you get to the actual recipe (please tell me if ANYONE has ever read what it says before the ingredients list), I’m going to get right into it:
Ingredients:
- 125 g flour – you can use any flour you like. I prefer whole meal spelt flour
- 1 scoop (around 30 g) of vegan protein powder – again, use whatever flavor you like. I generally go with vanilla (this one)
- 125 ml of plant milk
- 1 ripe banana
- 1 tsp of baking powder
- A dash of salt
- 1-2 tsp of maca powder – this is optional, but does give a really nice taste to the pancakes, plus has lots of health benefits! (I use this one)
- Chocolate chips if you want extra fancy pancakes
Method:
- In a high speed blender, blend together the banana & plant milk
- Add all the dry ingredients (except chocolate chips, if using) and blend until well combined
- Let the mixture sit for a couple of minutes to thicken up a little bit
- Add to a non-stick pan and cook until golden brown on both sides
- Top the pancakes with whatever you like – more chocolate, nuts & banana, or soy yoghurt, raspberries & almond flakes as I have in the picture above!
